Homemade Orange Lollipop

#ramcooks #burpfulkitchen #lollipop #orange

Home made orange lollipop with orange juice and pinch of food color...

Kids relished it πŸ˜‹πŸ˜‹πŸ˜‹

Bring 3/4 cup sugar + 1/4 cup water to one string consistency, add orange juice 1/2 cup, a pinch of food color and let it be on sim for couple of mins until it's all bubbles in the pan. Turn off and cool under fan. Once it's warm enough to hold, apply a drop of oil on the palm and roll it as ball... Insert a tooth pic and let it dry until it's fully cold...

You can pour the hot syrup on a parchment paper and insert tooth picks for the thinner lollipop like this 🍭

You can add in any fruit juice(strawberry, mango, orange), food color is optional.

Javvarisi Paayasam aka Sago Kheer

#ramcooks #burpfulkitchen #sago #javvarisi #payasam

This is my only favorite payasam (sweet dessert) in my childhood 😍😍 on every special occasion I will be demanding the same πŸ˜‹πŸ˜‹

Recipe is very short and simple and the delicacy is yummilicious πŸ˜‹πŸ˜‹

Javvarisi/sago/tapioca pearls are available at grocery stores across. Soak 1/4 cup of sago in warm water for 1 hour, it will be doubled in size.

In a milk pan add 1/2 litre milk and add the soaked sago and cook on medium flame with constant stirring now and then to avoid burn at bottom. One the mix becomes homogeneous texture check whether the sago is fully cooked. If the mixture is too thick add some boiled milk. Once the sago is completely cooked(will look very transparent) add sugar and powdered cardomom and stir for couple of mins and turn off the stove. Add fried cashews and dry grapes.

This tastes divine when served hot or cold . I love it cold more. 😍😍

This is a simple mango smoothie ( mango n hung curd blended until smooth) with chopped mangoes and dry fruits , I have used almond, cashews, pista and walnuts.

Kerala Chicken Roast

#ramcooks #burpfulkitchen #keralachickenroast

Recipe was shared by a friend Shiba Nair  in another cooking group...  It's so effortless and tasty πŸ˜‹πŸ˜‹πŸ˜‹

Her recipe as follows:

This recipe is very simple n easy to make...

Marinate the chicken with turmeric powder, Chilli
Powder, coriander powder, Garam Masala, salt n a couple of tsps of water... cover n keep it aside for an hour...

Add the chicken in a pan n cover n cook on a medium flame till the chicken is done... there isn’t any need to add water as the chicken ll release water while getting cooked... open the lid to see if the chicken is done, if the chicken is done n there’s still water left in the pan, then cook the chicken on a high flame with the lid open till all the water evaporates n the Masala coats the chicken well...

In another pan add coconut oil, add mustard, onions thinly sliced, green chillies slit, curry leaves, add lots of thinly sliced garlic, ginger pieces finely chopped... cook everything till the raw smell goes away... add 1/2 tomato finely chopped n fresh ground pepper powder n cook till it turns mushy n get blended well with the Masala... now add the cooked chicken to this Masala, add three sprigs of curry leaves, 3 tsps of coconut oil n mix everything well & cook for two minutes or till the everything blends well & the chicken starts browning... garnish with coriander leaves... allow it to rest for a while... serve with hot rice or Malabar parAtha...

Palak Paratha

#ramcooks #burpfulkitchen #palakparatha #potato #cheese #stuffedparatha

Green chapathi is what my twins called this  πŸ˜‚πŸ˜‚

Simple Palak paratha stuffed with potato and cheese πŸ˜‹πŸ˜‹

Wash palak thoroughly, in a mixie add palak, ginger, garlic, cumin seeds n ground to smooth paste(no need to add water) . In a bowl take wheat flour, salt, chilli powder and mix well. Add palak paste and knead well. Add water if needed. I have also added oil while making dough that's optional.

In a bowl have added mashed potatoes and grated cheese. Add green chilli finely chopped if you want it spicy. I prepared for kids so I don't add chilli.

Roll out chapathi of 6inch size. Keep potato mix side. Fold in. Roll again .

Toss it in tawa with butter and cook until it gets brown spots on both sides.

Homemade Horlicks from Sprouted Wheat

#ramcooks #burpfulkitchen #horlicks #homemade

Saw this homemade Horlicks recipe from the sprouted wheat few weeks back. Got wheat by then but now only happened to do it πŸ˜…πŸ˜…

Soak whole wheat for 5-6 hours, drain water and wrap it with a cotton cloth. I placed it on a strainer over a vessel. Water it now n then and let it sprout for 2 days.

In pan fry the sprouted wheat until crispy, takes about 15 mins of frying I changed between medium and high heat every few mins. Take it out on a plate and cool for few mins.

While it's still warm, add it to the mixer grinder, add few badams(optional), sugar(optional you can add while making the drink too) and grind it to a smooth powder.

Seive it twice. And store in air tight container.

My seiver is not very fine so I m getting little bit of sediment after mixing it to milk. It will be better if we grind in rice flour mill I guess. If it's a hit with kids, will make more next time and grind in rice mill.

Tastes close to Horlicks except for the sediment.
Well something is better than nothing right πŸ˜‰

Coriander Chutney Mini Idli

#ramcooks #burpfulkitchen #miniidli #leftover  #chutneyidli #corrianderchutney #miniidli #kidssnack #snacktime #under10mins

Another recipe from my archive 😎

Leftover mini idlis and corriander Chutney turned out as yummy snack at evening.
Heat oil in a nonstick pan and add mustard and urad dhal ( I added lots :p) let it splutter. Add few Curry leaves. Add the chutney and mix well. Add the mini idlis and mix everything well on a high heat for 3-5 mins until all chutney is coated well on the idlis. ( if using regular idli it's better to keep in fridge for 30 mins before preparation.) Kids thoroughly enjoyed the green idlis πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹

Any chutney can be used except coconut Chutney...

Sweet Potato Sweet corn Beetroot Mini cutlet

#ramcooks #burpfulkitchen #minicutlets

Mini cutlet with Sweet potato+sweet corn + beetroot

Same like any usual cutlet recipe substitute potato with sweet potato πŸ˜‹πŸ˜‹πŸ˜‹

Recipe is simple :

Pressure cook sweet potato for two whistles. Peel skin and mash well. Add grated beetroot and coarsely pulsed sweet corn. Chilli powder, salt, chat masala a pinch. Mix everything well. If it's too soft add some corn flour to make it thick. Coat with bread crumbs on all the sides and shallow fry until it turns brown on both sides :)

Sweet Potato French Fries

#ramcooks #burpfulkitchen #sweetpotato #frenchfry

Receipe is same as like regular potato french fry...

Parboil the sweet potato fingers with salt. Drain the water and run under cold water. Add chilli/pepper powder, 1 spoon rice flour and shake well. Freeze it for 10 mins. Deep fry or shallow fry.

I have deep fried this now. I generally do shallow fry of this. Both tastes equal.

Serve immediately with tomato sauce dip.

Corn Flakes Chivda

Did this for a Facebook group weekly activity where we have to cook the given recipe and post pics.

Actual recipe posted :

Corn flakes Chivda with nuts and raisin.
Give tadka with Rai (mustard seed), curry patta, and green chillies, add cornflakes n roast for a few minutes then add toasted almonds , cashew, and raisins n salt and a dash of sugar. Let cool n store in airtight container. Yummy n healthy.

Thank you for such a simple recipe Minakshi Daryanani

I added in Almonds instead of cashew as it's not in stock.

Less spices used as I will be giving to kids. I read few recipes online and combined all shown πŸ˜‰

Ground nuts, Almonds, Gram dhal, Curry leaves, black dried grapes, chilli powder, chat masala, salt, fried cornflakes.

This is going to be my favourite easy snack forever :)

Rava Maida Paniyaram

#ramcooks #burpfulkitchen #ravamaidapaniyaram #deepfried

Soak 1/2cup Rava/sooji in water for 30 mins. Add 2tbsp maida, sugar as per taste level, one cardomom crushed. Mix everything well and set it aside for 10 mins. The batter has to be slightly thick like cake batter. If it's too thick add few spoons water and make the batter in correct consistency.

Heat oil in a pan. Scoop out a spoon of batter and drop into oil. Let it fry on medium heat for few mins. Turn sides. Cook until all sides turn brown.

Casual click 😊 as my twinnies were awake by the time it's all done and was ready to grab it on :)

Gulab Jamun Sabzi

#ramcooks #burpfulkitchen #jamunsab

Recipe as follows:
================

Prepare gulab jamun and fry it and keep ready. Actual recipe calls for jamun with Koya , but I have used here the jamuns from the MTR only.

In a pan add oill, once hot add the onion paste and saute till change color, add ginger garlic paste and saute until raw smell goes.

In a separate bowl take curd, add chilli powder, garam masala, turmeric powder, corriander powder, salt and besan/rice flour (it's used to thicken gravy, you can use all purpose flour as well, as I don't have it now I have used rice flour) and mix well.

Add this curd mix to the pan and add water to adjust consistency. Let it cook for 3-4 mins.

I have soaked 10 cashews and added that paste to the mixture to add richness (it's optional)

Add chopped corriander.

Add jamuns to this gravy just before serving and give it a boil once.

PS : original receipe calls to add lemon juice at last , since my curd was little sour I skipped lemon juice. Basically this Sabzi has to be sour not spicy. So add lemon juice if you use fresh curd.

Drumstick Coconut Masala

#ramcooks #burpfulkitchen #drumstickmasala #coconutbasedmasala

Drumstick in coconut based masala is my all time favorite πŸ˜‹πŸ˜‹πŸ˜‹

Recipe is very simple....

Cut drumstick into 1 or 2 inch pieces. Slit along till the center(so that drumstick LL be rich of masala taste πŸ˜‰)

In a pan add oil, temper with mustard and fennel seeds and Curry leaves. Add finely chopped onion, and saute till translucent. Add finely chopped tomato and saute till mushy. Add turmeric powder, chilli powder, coriander powder, garam masala, salt and give a brief stir... Add drumsticks and add water till it's all submerged. Cover with lid and cook for 10 mins. Keep checking if water is available if not add little by little to avoid sticking to the bottom.

In the mean time add coconut and fennel seeds in mixie and grind to a smooth paste.

Once the drumstick is cooked well add the coconut paste and cook till it forms a thick masala.

You can adjust consistency to have it as gravy for rice also.

PS :

To fasten the cooking time I always use my pressure cooker πŸ˜‰ all sauting done in pressure cooker and I cooked drumstick for 1 whistle and then open and add coconut paste.

Sundakai aka Turkey berry Pachadi | Turkey berry Dhal Sabzi

#ramcooks #burpfulkitchen #turkeyberry #dhal #sabzi #pachadi

I have never cooked this Turkey berry/ Sundakai. Have tasted few times when Mom made.

Mom sent lot of these fresh from garden in our visit to native. Was hesitant to do something out of it as I m lazy to cut all into small pieces πŸ˜‰

Got up super early today (6:30 only πŸ˜‚), so decided to give this a try. And loving the output πŸ˜‹πŸ˜‹πŸ˜‹

Recipe as follows:

Turkey berry : 1/2cup (wash and cut into two halves and soak in water)

Onion : 1 finely chopped

Tomato : 1 finely chopped

Thoor dhal : 1/4 cup, pressure cook for two whisles ( not fully cooked)

Sambar powder : 1.5 tsp

Turmeric powder : 1/4tsp

Salt : as per taste

Mustard, jeera, oil  and Curry leaves to temper.

In a pan add oil, once hot temper with mustard, jeera and Curry leaves. Add onion and saute till translucent. Add the tomatoes and saute till mushy. Strain out water from Turkey berry and add it to the pan. Saute well for 6-7 mins. It's has to be sauted really well otherwise it will taste bitter. Add the turmeric powder, sambar powder and salt and mix briefly. Add one cup water. You can cook this with lid closed for 6-7 mins. I added to the pressure cooker and cooked for one whistle. Now add the cooked thoor dhal and mix all and let it cook for couple of mins until boil. Add chopped corriander and serve with rice/chapati.

I had with the chapathi for breakfast now πŸ˜‹πŸ˜‹πŸ˜‹

Paneer Tikka Masala

#ramcooks #burpfulkitchen #paneermasala

Followed a random recipe from YouTube to prepare Paneer Tikka masala....

Mixed some cooked basmathi rice with the leftover masala in kadai πŸ˜‰

Recipe :

In a pan with boiling water add one medium size onion and 10 cashews and cook till onion gets cooked. Let it cool and grind to smooth paste.

In a bowl add 2tsp rice flour+ 2tsp corn flour and salt and make a paste not too thick nor too thin. Add cubed paneer and coat well.

In a pan add oil and shallow fry the paneer until brown on all sides. In the same oil fry cubed onion for few mins, cubed capsicum for few mins, cubed tomatoes (without seeds) for few mins. (fry each separately).

In the same pan add chopped garlic, chopped ginger and saute till raw smell goes. Add finely chopped onion and saute till translucent. Add chilli powder, turmeric powder, garam masala, salt and saute for couple of mins.add the onion paste from first step. Add 1sp tomato ketchup(optional)Add little water and let it boil for few mins.

Add the fried veggies and mix well. Add the fried paneer and mix everything well and cook for 2 mins. Add chopped corriander and serve :)

Will be going good with rice/chapati/naan varities.
