#ramcooks #burpfulkitchen #arbiroast #seppakizhangu #fry

That heart n stomach filled lunch πŸ˜‹πŸ˜‹πŸ˜‹

Seppakizhangu fry aka Arbi roast with spinach dhal rice 😍😍

Arbi roast / seppakizhangu fry :

Pressure cook Arbi/seppakizhangu for 3 whistles with water level enough to cover the arbi. Once cool down, remove the skin and cut into small discs. Add red chilli powder, salt and little rice flour and shake few times. You can't mix with hands as it will become sticky. Mix in a large bowl and shake it randomly few times so that all arbi are coated with some chilli powder. Deep fry or shallow fry. Choose big size arbi for this.

For spinach dhal rice :

Pressure cook moong dhal and chopped greens for two whistles without salt. Once pressure is settled open and mash well. In a pan add oil, temper with mustard seeds, jeera and red chilli. Add to the spinach, add salt and mix well. Add water as per your required  consistency and cook for a minute

#ramcooks #burpfulkitchen #lollipop #orange

Home made orange lollipop with orange juice and pinch of food color...

Kids relished it πŸ˜‹πŸ˜‹πŸ˜‹

Bring 3/4 cup sugar + 1/4 cup water to one string consistency, add orange juice 1/2 cup, a pinch of food color and let it be on sim for couple of mins until it's all bubbles in the pan. Turn off and cool under fan. Once it's warm enough to hold, apply a drop of oil on the palm and roll it as ball... Insert a tooth pic and let it dry until it's fully cold...

You can pour the hot syrup on a parchment paper and insert tooth picks for the thinner lollipop like this 🍭

You can add in any fruit juice(strawberry, mango, orange), food color is optional.

White Pumpkin Halwa

#ramcooks #burpfulkitchen #whitepumpkinhalwa #sweet

I reserved some pumpkin in the morning while making sambar.

This halwa is very simple and quick and tastes awesome πŸ˜‹πŸ˜‹

In a pan, add ghee, roast cashews and keep it aside. Add grated pumpkin with the water and cook on medium heat until the pumpkin in cooked. You can close with lid and cook. Once the pumpkin is cooked add sugar, cardomom powder a pinch, food coloring, and give a brief stir. Adding nutmeg powder will enhance taste , I don have nutmeg so I din add. Cook till the halwa starts separating from the sides. Only this much have to be done for Kasi halwa.

My mom's recipe , she will add a spoon of wheat flour mixed in water to the above mixture and cook till it starts leaving sides. I have added wheat flour water here.  The quantity is so less as I cooked very small amount of pumpkin. I couldn't resist myself from licking the pan πŸ˜‚πŸ˜‚

The one on the picture is reserved for kids 😘😘

Add sugar as per your taste level. I used 1/4 wedge of pumpkin, 1/2 cup sugar, 1 cardomom. My total quantity is very less only. Mine turned medium sweet.

Wheat Poli | Poran Poli | Poranam Poli | Sweet Poli

#ramcooks #burpfulkitchen #wheatpoli #coconut

This is my first time doing this poli... I always think it's too complicated to do... But no it's not that difficult πŸ˜‰sothapified first few on folding though 😜

Receipe as follows :

Add 1 cup wheat flour, 1/4 tsp turmeric and salt and prepare like chapathi dough. Apply 1 spoonful of gingelly oil after kneading and let it rest for 1 hour.

For the filling:(poranam)

Add 1/2 cup jaggery 3/4 cup water and keep it in stove.once jaggery is melt down strain it to remove any impurities. Add it back to the pan, and let it boil. Add grated coconut and a pinch of cardomom powder and a pinch of dry ginger(optional) and mix everything well. Keep in medium heat and saute until it gets thick. Keep the poranam aside.

For making the poli :

In the kitchen surface keep a polythene bag(I used milk cover). Take lemon size kneaded dough and place on top of cover. Apply some oil in your fingers. Press the dough to make a 4 inch circle. Keep one spoonful of poranam in the centre. Fold the  outer circle on top. Pinch out the extra dough on top and press it again gently on both sides. Press is slowly so that the poranam don't come out.
Tip : keep your hands oily. I first pressed the dough thick in centre and thinner at outer circle after few polis so that I don't have to pinch out extra.

Mix all ingredients except thattai.

In a plate place one thattai, 1/2 spoon chutney, Vegetables mix, top it with another thattai with chutney(chutney facing down).
